It took various forms, such as cooked corn tortillas, known as 'cocollí', a term that comes from the Nahuatl language and means "twisted bread".

And how did it evolve into the characteristic bread we have enjoyed throughout our lives? Well, this happened with the arrival of the Spaniards, who introduced European wheat, an ingredient that transformed the Mexican diet as it merged with the country's rich variety of flavors and customs.


However, the great transformation of bread in Mexico occurred with the influence of French bakers, who brought with them recipes such as brioche, a sweet dough composed of wheat flour, yeast, sugar, salt, milk or water, eggs and butter. This European adaptation laid the foundations for the creation of Mexican breads, giving rise to a wide variety of delicacies that delight our senses and connect us with our roots.
